To sharpen knives the easiest method is to use the Lansky sharpening system. This method assures the angle is constant while sharpening and it will produce a proper edge the first time you use it. 

To remove grease, grime and finger prints I find the best  product is " Nevr-dull". It restores brass and will get into even the smallest areas.

Never use your knife for prying. Always take care of the tip.

Never use your knife for throwing unless it is specifically made to throw.

Throwing knives have a lower hardness to prevent chipping.

Never ever put a custom knife in the dishwasher!

Place a piece of masking tape on the blade before you use the clamp from the Lansky sharpening system. This will help provide a non-slip grip when your sharpening.

Acidic foods (lemon juice, vinegar, mustard, etc.) should not remain on the knife blade after use as they can cause discolouration. To avoid this problem, a knife should be cleaned as soon as the cutting job is done.
